Vitamin A is a fat-soluble vitamin, an organic compound with a chemical formula of C20H30O. It is stable to heat, acid, and alkali, and is easily oxidized. Ultraviolet rays can promote its oxidative destruction. Vitamin A includes A1 and A2, A1 is retinol. Vitamin A2 is 3-dehydroretinol, and its physiological activity is 40% of vitamin A1.
Vitamin A plays an important role in maintaining vision, promoting growth and development, maintaining epithelial tissue health, enhancing immune function, and inhibiting certain precancerous lesions. Vitamin A deficiency may lead to growth retardation, night blindness, dry eyes, corneal softening, dry and keratinized skin, and reduced respiratory resistance, increasing the risk of infection.
